We found ourselves in Oswego again, as we tend to do, and decided to finally try Chubby’s after years of driving past and saying we wanted to check it out. We got inside at 6:40 on a Friday night and the place was packed other than a single high top and a couple of seats at the window bartop. It took a few minutes before any staff noticed we were there, but they were busy so we understood. Once we got seated, our waitress came over and let us know that it was going to be approximately 45 minutes on the wait for food but we decided to stick it out anyway. She took our drink order and, due to the high volume and a lot going on at once, it took a while for her to make it back to us to take our order.
We decided to start with Spinach Artichoke Dip seeing as we were in no rush, followed by the Mia Panini for Chelsea and the Chubby’s Burger for myself. As we hung out and waited for our food, we just enjoyed our time together and chatted. During the actual 45 minute wait, the first highlight of the evening was when “No Scrubs” by TLC came on the speakers and the place erupted into a cacophony of women all singing along. Staff seemed to be rushing at all times but the patrons were all just hanging out and having a good time, so that was a good sign.
The spinach dip came out at almost exactly the 45 minute mark. It was OK. Good flavor, but not nearly enough spinach nor artichoke. It was more like a creamy dip with a splash of spinach and a whispering of artichoke. The chips were really well seasoned though, so that was a plus.
Unfortunately, our meals came out before we even hit the halfway point on the dip, so that got abandoned in favor of our entrees. Chelsea’s Mia Panini (grilled chicken, pepper jack cheese, bacon, roasted red peppers, honey dijon mustard) was good. A little hard to differentiate flavors, but overall a solid sandwich. The fries were immaculate with how perfectly hot, crispy and seasoned they were.
My Chubby’s Burger (massive angus beef patty, roasted red peppers, bacon, American cheese & a sunny side up egg with a side of honey hot sauce) was insane. I ordered medium rare and it actually came out a perfect medium rare. The hot honey sauce was sweet and spicy, the egg was spot-on, delicious thick-cut bacon, melty cheese, it was a perfect burger. Everything about that burger was executed flawlessly to the point where I no longer cared about the long wait nor the sudden arrival so quickly after getting the spinach dip. I ordered onion rings as a side, which were also perfectly cooked and well seasoned which came with a side of house-made zesty sauce like Burger King. Honestly, one of the best burgers I have ever had.
Once we were ready to check out, our server came by and apologized again for the wait and explained that they do so much to-go food that it backs up the dine-in orders on weekends and the kitchen is so small it makes it difficult to keep up no matter how many people are working. Only so much space to cook on, ya know? The massive amount of takeout definitely explains the wait time and how hectic the staff were, but we weren’t upset about the wait. I wouldn’t go back on a weekend, especially during Lent when they are getting rocked on takeout fish fry, but I would absolutely go back to get that Chubby’s Burger again. Perfection on a plate.
