This meal took place on December 4th, 2023
Right. So this is what happens when you’re an idiot who loves food and decides you’re going to tell the legend himself Christian Felix at Brewer Union Cafe that it’s your birthday and he gets to go nuts and make the most outrageous burger he can because it’s your birthday so let’s go wild. I end up with this monstrosity.
This is a pepper-seared NY hard roll with maple collard greens, 1lb burger stuffed with smoked gouda, caramelized onions and bacon, coffee BBQ sauce gochujang cheese goo, smoked summer sausage, blueberry rhubarb bacon jam, and then smothered in Guinness beer cheese and bacon sauce and sprinkled with fried onions and gold flake for extra flair. A side of killshot gravy fries, Nashville fries, pickles and gairdeniera.
No joke. Best. Damn. Burger. Ever. BEFORE smothering this mammoth of a burger in cheese and bacon sauce, it weighed in at 3.8lbs. I regret nothing. Killed the burger and about half of the Nashville fries, but had to tap out on the killshot gravy fries. I did try the Killshot fries and they were incredible, but if I kept eating then Christian was going to have to scrape me off of the ceiling and walls when I exploded in the dining room.
My only restrictions for this challenge was it had to be a burger and couldn’t have tomato, avocado, blue cheese or shellfish. One of these days I’m going to fight Christian because he’s making the rest of us look bad. From one Chef to another, thank you for making me the absolute best birthday meal I have ever had. Imma go home and take a nap now.
Tl;dr
Go to Brewer Union Cafe in Brewerton. Their regular menu is worth every penny, but if you feel like living dangerously then tell Christian to make you whatever he feels like. You will end up with the best damn meal of your life.
